My amazing St Honore Chiboust cake. I think its prettier than chefs in demo. Tomorrow is our last demo chef will be just showing us some intermediate chocolate work and then in our practical i will be making a tart souffle again just to practice for the final which is on monday.

There are many acids, you can smoke acids so you can also put them in your cake! When you drink lemonade that is also a different acid!

So today was probably the most entertaining demo i have ever been in . We had Chef Christian for the first time in a demo and he is very funny. He made a St honore  Chiboust (the one with the ball on top) and a Paris- brest cake. Tomorow i will be making hte St. Honore Chiboust cake but maybe not with the ball on top. Anywho they are both tasty.

Today was a pear day and this morning chef showed us how to make Charlotte aux Poires and Entremets aux poires. In the practical this afternoon we made the charlotte aux poires. Mine is the one with the rose on top the other chef made in demo.

Soooo today was also my demo assist which is when we have to assist in a demo for superior or intermediate pastry. Mine was a superior pastry class and they were doing ice sculpture so i didn’t have to assist much. Just sat outside and watched chef Armando do his thing and got him a cup of tea at the end. Also a bonus was it only took him like 20 min to do the sculpture so i had my afternoon off and got all my laundry done. For a sculpture that size the ice is about 100$ and you charge about 250-300 for the product.

Today was lesson 17 only 2 more to go before my finale wooot. Chef made a entremets casino (the swirly one) and a pave du roy which i will be making tomorrow in my practical super chocolately. The entremets casino is filled with bavarian cream and can be used as a christmas log.

Had a great halloween this year! I was a fairy on friday night and i went out with a large group of french exchange students. Sat night me and kate wandered downtown she was a pin up girl and i was robin. We met jesus and god and i only found one batman and it was a batgirl. weird cuz i figured there would be more out there.
